It’s hard to be creative when it comes to Passover and breakfast! In our house it’s either scrambled eggs with a piece of matzah on the side or matzah brie. So, trying to incorporate the current food crazes as in “Avo” toast with Passover, this “Avocado Matzah Toast” was conceived!
1 piece of matzah
1 small ripened avocado, cubed or mashed (however you prefer your avocado)
4 grape tomatoes, halved
salt & pepper to taste
chili flakes (optional)
drizzle of olive oil (about a teaspoon)
cooking spray for eggs
Place matzah on plate.
cut tomatoes in half.
Cube or mash avocado and place it on matzah. Scatter tomatoes on top and sprinkle with chili flakes if you are using them. Season with salt and pepper to taste.
In a non stick pan over medium high heat add the eggs and once the whites are setting, cover and remove from heat. Let it sit for 2 minutes.
Remove eggs and place them carefully on top of avocado. Season eggs with salt and pepper to taste.
Drizzle with olive oil.
*If you do not want to have it with eggs, drizzle with olive oil and enJOY!
