• Turkey Bolognese with Spinach & Faro

    Ingredients:

     

    • 1 package (1.3lb) Lean Ground Turkey
    • 4 oz. pancetta cubed
    • 2 cloves garlic chopped
    • ¼ cup olive oil
    • ¼ cup red wine (use whatever you have)
    • 16 oz. either homemade or your favorite marinara sauce (I love Raos)
    • 2-3 handfuls fresh baby spinach
    • 1 16 oz. bag or box of whole grain faro (I use Trader Joes)
    • salt & pepper
    • Grated parmesan cheese

     

    Directions:

     

    In a large saucepan, heat olive oil over medium heat and cook pancetta until cooked. Add turkey meat and cook, breaking up into small pieces until cooked through. Add wine and marinara sauce into pan and mix (for those of you who like more sauce, feel free to add a little more). Mix and once it begins to bubble, reduce heat to low and simmer for 15 minutes. (if it simmers for longer, that’s perfectly fine)

     

    In the mean time, cook the faro according to package instructions. Like pasta, it needs to boil for 10 minutes. Drain faro. Place a handful of spinach in each serving bowl. Add as much faro as you like and then spoon the turkey over the faro. EnJOY!

    *The Bolognese can also be served over spaghetti, penne or zucchini linguini!
