This is a dish that my mom has been making for many years for all our family holidays (not only Passover) and its always a winner! What’s great is that it is super easy and you can make this ahead, freeze it and reheat it! When reheating just leave at room temperature before placing in oven. It should start to bubble & the top should start to turn golden brown! Usually 20 minutes in a preheated oven will do!
Serves 8-10 as a side dish
*If making “Not for Passover” use 3 tablespoons of flour instead of matzo meal and the creamer can be regular creamer.
Preheat oven to 350 degrees
Coat oven safe 9 x 12 (approximately) pan with olive oil and place in oven.
Combine all ingredients in bowl and mix together.
Pour mixture into hot baking dish and bake for 35-45 minutes.
