• 3 Bean Low Fat Turkey Chili (Serves 6)

    3 Bean Low Fat Turkey Chili

    Ingredients:

    • 2 small onions, chopped
    • Cooking spray
    • 5 cloves garlic
    • 3 teaspoons chili powder
    • 2 bay leaves
    • 2 tablespoons ground cumin
    • 1 tablespoon dried oregano
    • 2 teaspoons chili flakes
    • ¼ teaspoon cayenne pepper
    • 3 packages or 3 ¾ lb. lean ground turkey
    • 32 oz. can cannellini beans rinsed and drained
    • 16 oz. can black beans rinsed and drained
    • 16 oz. can garbanzo beans
    • 4 cups (32 oz.) low sodium chicken stock
    • ½ cup fat free sour cream or Greek yogurt (I use the yogurt!)
    • Salt & pepper to taste

     

    Directions:

    Heat a large pot or dutch oven over medium heat. Spray well with cooking spray. Add onions and garlic and sauté for about 5 minutes. Add turkey and continue to cook and with a wooden spoon break up the turkey until white. This takes about 7-10 minutes. Add salt, pepper, chili powder, cumin, oregano and chili flakes and cook for about 2 more minutes. Add the beans and broth and cook uncovered for another 10 minutes.

    Lower heat and simmer covered for about 45 minutes, mixing occasionally. Add the sour cream or yogurt, stir and cook for 5 minutes more. Serve and enjoy!

    *You can serve this over rice, white or brown or any other grain you like. I serve over fresh chopped spinach with a sprinkle of fresh cilantro and shredded parmesan, but works well with grated cheddar too! Also feel free to serve with tortilla chips….yummy for dipping!

    *What’s great about making this large portion is that its perfect for freezing and makes for another super easy meal or two!
